Who doesn’t love a good hearty breakfast? My newest savory indulgence is what I call my “Eggy Avocado Cheese stacker” I know, right ? How could this not be delicious? It is so delicious and filling even without bread. Keeping it simple & gluten free is easy! Best of all it comes in around 388 calories of healthy gluten free yumminess! PLUS, a big bonus is that clean up is a snap. I usually clean up while the cheese melts.
My egg of choice is farm fresh but, lacking a consistent supply I opted for Large cage free “Certified Humane” eggs from Aldi. But, any egg will do it is a matter of your preference & what’s affordably available to you. What I really love is how simple and straightforward this recipe is. Plus, super easy to make. Any recipe I share will always be EASY & AFFORDABLE!

ingredients:
- 1 Large Egg
- 2 Slices Cheese- Any Type Your Choice
- 1/2 Avocado
- Small Amount Of Oil For Pan- Almost Any Will Work
Preheat your pan over medium low heat. While pan is warming prepare your plate. Start by Choosing a ripe avocado and slicing it in half around the center. Use the half that does not contain the pit. Store the half with pit still in it in an airtight container in fridge. This will keep it fresh for a day or so. Using a spoon scoop out half of the avo you are using & arrange on plate in a single layer. Place 1 slice of cheese on top.
Cook egg to your preference. Carefully flip halfway & spoon the remaining avocado covering the top of your egg in a thin layer. Cover with cheese & then place a lid or piece of foil on top to melt the cheese. Remove pan from burner so that your egg does not overcook. You simply want to melt the cheese at this point. While my cheese melts I like to clean up any mess.
